"How's This Weeks Menu Working Out?"

I wanted to let y'all know how our menu plan is working out.

Tuesday, we had planned to eat out. We ended up cooking dinner at home. We had Tilapia w/Balsamic Browned Butter and Creamy Farfalle w/Bacon, Tomato and Peas. This is a delicious dinner. We use less pasta but keep the same amount of sauce. Rachael tends to use way more pasta than we could ever eat. And yes, we still have plenty of leftover pasta with sauce. We usually have the leftover pasta for lunch.

Thursday, we made the Maui Chicken. My daughter and I thought that it might be a little bland. So, we added some Chinese 5 spice powder(about 1/4 tsp.)and a chopped shallot. The chicken was moist and fork tender. We didn't like the taste of the pineapple. It didn't taste like pineapple, it tasted more like chicken stock. Next time, we are going to use the pineapple juice from the canned pineapple and only half of the chicken stock. We are going to reserve the pineapple until the chicken is done and add it right before serving. We are also going to use some fresh ginger, 4 Tbs of brown sugar instead of 2, and a diced jalapeno for some kick. We'll let you know how it turns out.

Menu Planning Monday





This is my first attempt at doing Menu Planning Monday. I hope y'all try some of the recipes that I have listed. My daughter is 14 years old and loves to cook. She has been helping out in the kitchen for a couple of years know and has practically taken over the kitchen. I use to call her my little sous chef. Now, I am her sous chef. She has far surpassed my kitchen skills at the age of 14. I use to burn every batch of snap peas that my mother picked from our acre garden. Anyway, it really is nice cooking with someone who actually enjoys it. I hope that by posting our menus with recipes that I might inspire you to try something different at least once a week.

A Great Organizing Tool For Free!




Today, I'd like to share with you a site that Erin has shared with me and her other readers on her blog. The site is called Cozi and offers many great features, all for free. You can organize your calendar on their website and color code it to your family members. What I like about this site is that you can access it from anywhere, including your cellphone. It also has a place for list, that means no more worrying about forgetting your list at home. I can't wait to try it out. I believe that this is going to be a great organizing tool.

Free School Supplies @ CVS




CVS is having another 3 day sale on school supplies. Here is a list of what is being offered.

Save Money on Dining Out @ Restaurant.com




I really enjoy getting gift certificates at Restaurant.com. I have purchased a $25 gift certificate in the past, which usually cost $10 for only $2 when they ran their 80% off promo. My mother-in-law, daughter and I used this certificate at Chatters Cafe in Houston after the ballet one night. The certificates are good for 1 year from the purchase date. So if you know you like the restaurant then purchase a couple of certificates to have on hand. I believe this is a great place to save money if you like to dine out, even in these hard times. Think about the possibilities, birthdays, anniversaries, date nights and many more.


The certificate that we used was for $25 off a minimum purchase of $50. The three of use ordered lovely dinners and 2 desserts to meet the $50 threshold. After the discount and a very generous tip, we walked out only paying $42 for the three of us to have a very lovely meal. I will be doing this again in the very near future with my husband and 2 children.

Two Teen Disney Movies For Under $12

Today I picked up both, Jonas Brothers: The Concert Experience and Princess Protection Program for $15.99 each. When you buy both of these DVDs or BlueRays in the same transaction they give you a giftcard for $10. You can print a coupon for $10 off the purchase of these movies when you purchase them together here.

I did 2 transactions for a total of 4 movies.

I used 1 coupon for the first transaction and paid $21.98 for the 2 movies. They gave me a $10 Target giftcard.

I used 1 coupon and the Target giftcard from the first transaction to pay for these 2 movies and paid $11.98. They gave me another $10 Target giftcard.

My total out of pocket was $33.96 for 4 movies and I have a $10 Target still in my pocket.

If you just do one transaction then your total for 2 movies will be under $12 because you still have $10 on the Target giftcard to spend.

Plan ahead: think birthdays and christmas presents.
